October 18 to 28

Maple squash soup with seasoned croutons

Cold appetizers
Smoked trout pâté en croûte with a black chanterelle and wild berry chutney

Rabbit and quail confit salad on a bed of apples and peaches with rustic greens

Hot appetizers
Pistachio crusted scallops on a crispy noodle pillow with a honey, hoisin and wasabi oil coulis

Wild boar and goat cheese cannelloni with a Roma tomato hunter sauce

Raspberry pepper glazed pheasant with a fall harvest herb au jus
served with dauphinoise sweet potatoes and leeks and fresh seasonal vegetables

Braised elk tenderloin in calvados and Bay of Fundy forest mushrooms served with a rosemary, onion and juniper barley risotto and fresh seasonal vegetables

Pan seared Atlantic halibut with a blueberry ragoût on an amber squash purée
served with a brown butter orzo pasta and fresh seasonal vegetables
